Our Monovarietal, arise from the challenge of creating a Balsamic Vinegar of Modena PGI from a single grape variety in purity. The result is a product with unmistakable characteristics, able to satisfy even the more sophisticated consumer. We are proud to be able to state that we were the first company in the Balsamic Vinegar panorama, to present a line of Monovarietal Balsamic Vinegars of Modena PGI. This unique high-density Balsamic Vinegar of Modena IGP, is the first one produced with 100% Lambrusco grapes of Emilia Romagna, which among the 6 varieties to be regulated by the Consortium for the production of Balsamic Vinegar IGP, is the only one originating in the Modena area. This special project has been awarded as best and innovative product at several food exhibitions like:
Sial innovation – Paris, Bellavita award – Amsterdam, Sofi Award – Fancy Food Show in NY, Gold Medal – Merano Wine Festival in Italy.
On the palate it is simply exquisite, with flavors of fruit and spices, sweet but persistent. To be combined with: grilled red meat, aged cheeses, raw fish, grilled vegetables, caviar and shellfish, fresh fruit. Suitable for creative use in the kitchen. A true gourmet product.

The unicity of I Solai’s Balsamic Vinegars is given, above all, by the use of high quality raw materials. To this, it’s added the production method, adopted in total respect of the Modena tradition and in the end the techniques of refinement and ageing of the product.

The Balsamic Vinegar of Modena PGI is produced with grapes of seven specific vines: Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni. Each brings different and distinctive aromatic notes. Aged wine vinegar is expertly added to these grapes so as to allow the balance between sweet and sour, typical of Modena balsamic vinegar.
